  • 1 cup cooked quinoa
  • 1 medium butternut squash (peeled and cubed)
  • 2 cups kale
  • 1 medium apple
  • 1/2 cup dried cranberries
  • 1/4 cup pumpkin seeds (optional)
  • 1/4 cup tahini
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 24 tablespoons warm water
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, spread cubed butternut squash, drizzle with olive oil, and season with salt and pepper. Roast for about 25 minutes until tender.
  3. Rinse quinoa under cold water and cook according to package instructions (generally, use 2 cups of water per cup of quinoa).
  4. In a mixing bowl, combine tahini, maple syrup, apple cider vinegar, olive oil, salt, pepper, and warm water; whisk until smooth.
  5. Assemble bowls by layering quinoa at the base and topping with roasted squash, kale, diced apple, cranberries, and pumpkin seeds.
  6. Drizzle dressing over each bowl before serving.
