  • 2 skinless chicken thighs
  • 8 oz shrimp (peeled and deveined)
  • 1 pinch saffron threads
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 2 garlic cloves (minced)
  • 3 cups chicken broth
  • 1 cup canned diced tomatoes (drained)

Instructions

  1. Prepare ingredients by chopping bell peppers and mincing garlic.
  2. In a large paella pan, heat olive oil over medium heat. Sauté seasoned chicken thighs until browned, then remove them from the pan.
  3. Add bell peppers and garlic to the same pan; cook until soft.
  4. Stir in bomba rice for about 1–2 minutes until slightly toasted, then sprinkle saffron over the mixture.
  5. Pour in chicken broth while stirring gently; bring to a boil and reduce heat to low. Place cooked chicken on top without stirring further.
  6. After ten minutes, arrange shrimp on top, cover loosely with foil, and cook for another five minutes until shrimp are pink.
