  • 5 dried guajillo chiles
  • 1 tablespoon cumin seeds
  • 1 medium onion
  • 5 garlic cloves
  • 1 tablespoon tomato paste
  • Salt to taste

Instructions

  1. Remove stems and seeds from dried guajillo chiles; soak them in hot water for 15 minutes until soft.
  2. Blend softened chiles, toasted cumin seeds, garlic, onion, tomato paste, and salt until smooth.
  3. Marinate the chuck roast in the marinade for at least two hours or overnight for best flavor.
  4. Brown the marinated meat in a pot over medium-high heat for about eight minutes.
