Ingredients

Scale
  • 2 lbs beef chuck roast (cut into bite-sized pieces)
  • 3 tablespoons vegetable oil
  • 1 large onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 inch ginger root (grated)
  • 1 teaspoon cayenne pepper (adjust to taste)
  • ½ cup cider vinegar
  • 1 tablespoon tamarind paste
  • 2 teaspoons coriander powder
  • 2 teaspoons cumin powder
  • Salt to taste

Instructions

  1. Marinate the beef by mixing it with cider vinegar, ginger, garlic, cayenne pepper, coriander powder, cumin powder, and tamarind paste in a bowl. Refrigerate for at least one hour.
  2. Heat vegetable oil in a large pot over medium heat. Sauté onions until soft and golden brown (about 5-7 minutes).
  3. Add marinated beef and marinade to the pot. Cook until browned on all sides (approximately another 5-7 minutes).
  4. Pour in enough water to cover the meat; bring to a boil. Reduce heat to low, cover partially, and simmer for about two hours until beef is tender.
  5. Adjust seasoning as needed before serving hot with rice or naan.
