  • 2 medium sweet potatoes, peeled and diced
  • 1 granny smith apple, cored and diced
  • 1 cup dried cranberries
  • 1 cup quinoa (uncooked)
  • 2 cups apple cider
  • 1/2 cup chopped pecans, roasted
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon minced shallot
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil and spread on a rimmed cookie sheet. Roast for about 15 minutes until lightly browned.
  2. Rinse quinoa under cold water. In a medium saucepan, bring quinoa and apple cider to a boil; then reduce heat to simmer for about 15 minutes. Stir in cranberries near the end.
  3. In a mixing bowl, combine cooked quinoa, roasted sweet potatoes, diced apples, and minced red onion.
  4. For the vinaigrette, blend maple syrup, shallot, dijon mustard, vinegar, salt, and pepper in a food processor while slowly adding olive oil.
  5. Pour vinaigrette over the salad mixture and toss to coat evenly. Top with roasted pecans before serving.
