Perfect for any occasion—from holiday gatherings to cozy nights in—these mini apple pies are quick to prepare, taking just about 40 minutes from start to finish. Using pre-made refrigerated pie crust not only simplifies the process but also ensures you achieve that golden-brown perfection without sacrificing flavor. Each cookie bursts with spiced apple goodness, making them an irresistible treat for friends and family alike.

Ingredients

Scale
  • 4 tablespoons unsalted butter
  • 3 apples (cored, peeled, and diced)
  • 1 ½ teaspoons lemon juice
  • ⅓ cup granulated sugar + ¼ cup for topping
  • 2 teaspoons ground cinnamon + 2 teaspoons for topping
  • ¼ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 4 store-bought refrigerated pie crusts
  • 1 large egg (beaten)

Instructions

  1. Preheat oven to 350°F.
  2. In a medium pan, melt butter over medium-low heat. Add diced apples, lemon juice, sugar, cinnamon, salt, and nutmeg. Stir until boiling; simmer until apples soften (about 13 minutes). Stir in cornstarch until thickened and cool.
  3. Roll out pie crusts and cut into circles using a cookie cutter.
  4. Place circles on lined baking sheets, fill with apple mixture, and brush edges with beaten egg.
  5. Create lattice tops using remaining crust strips; trim excess.
  6. Brush tops with egg wash and sprinkle with sugar-cinnamon mixture.
  7. Bake for 20-22 minutes or until golden brown. Cool before serving.
