  • 200 g digestive or graham crackers
  • 150 g diced apples
  • 600 g cream cheese
  • 200 g granulated sugar
  • 80 g dark brown sugar
  • 70 g butter (room temperature)
  • 3 large eggs
  • 150 g sour cream
  • Cinnamon
  • Nutmeg

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. For the crust, combine crushed crackers, spices, brown sugar, and melted butter. Press into a springform pan and bake for about 10 minutes.
  3. Toss diced apples with granulated sugar and cinnamon; set aside.
  4. For the cheesecake filling, beat cream cheese with sugars until smooth. Mix in sour cream, cornstarch, vanilla extract, butter, and eggs until just combined.
  5. Layer half the cheesecake filling over the crust, followed by half the apple mixture. Repeat layers and bake for around 75 minutes or until slightly jiggly in the center.
  6. Cool in the oven for an hour before refrigerating for several hours.
