  • 1 teaspoon ground cinnamon
  • 2/3 cup light brown sugar
  • 2 large eggs
  • 1 cup whole milk
  • 6 tablespoons unsalted butter (melted)
  • 2 cups finely diced apples (Golden Delicious preferred)
  • Topping: 1/2 cup unsalted butter (melted), 3/4 cup granulated sugar, 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 425°F (220°C). Grease a muffin tin or line it with muffin liners.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, mix brown sugar, eggs, milk, and vanilla extract until smooth. Stir in melted butter.
  4. Gradually add the dry mixture to the wet mixture until just combined; avoid overmixing.
  5. Toss diced apples in reserved flour and gently fold into the batter.
  6. Fill muffin liners about three-quarters full and top with crumble mixture.
  7. Bake for approximately 15 minutes until golden brown. Allow cooling slightly before serving.
