  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 1 cup brown sugar
  • 3 bricks cream cheese
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices (cinnamon, nutmeg)

Instructions

  1. Boil apple cider with mulling spices until reduced to about 1/3 cup; let cool.
  2. Preheat oven to 350°F (175°C). For the crust, pulse cookies in a food processor, mix with butter, and press into an 8” springform pan. Bake for 10 minutes.
  3. Lower oven to 325°F (160°C). Beat cream cheese and brown sugar until smooth; add sour cream, vanilla, salt, and cooled cider. Mix well.
  4. Incorporate eggs one at a time along with flour; pour filling into crust.
  5. Bake in a water bath for about 90 minutes until set on edges but wobbly in center.
  6. Cool gradually in the oven for at least 30 minutes before refrigerating overnight.
