  • 1 large egg (room temperature)
  • ⅓ cup white granulated sugar
  • ¼ cup vegetable oil
  • ¼ cup full-fat sour cream (room temperature)
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 3 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, toss chopped apples with brown sugar and cinnamon.
  3. In another bowl, whisk egg, granulated sugar, oil, and vanilla until smooth.
  4. Combine flour and baking soda in a separate bowl; then mix into the wet ingredients gently.
  5. Fold in the apple mixture.
  6. Pour batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  7. While baking, prepare the glaze by whisking powdered sugar, vanilla extract, and milk until smooth.
  8. Cool bread for 10 minutes before drizzling glaze over it.
